The do’s and don’ts of cooking with wine

(WGNO) – People always ask, “Is there a specific wine to use for cooking, or can I use anything?” Well, Adam Acquistapace of Acquistapace’s Covington Supermarket says the main thing to take notice of, is the salt content.

While grocery shopping, you may see something labeled ‘cooking wine.’ There’s nothing wrong with cooking with this, but there are plenty of alternatives.

Wines labeled ‘cooking wine’ contain salt. Your food probably already has salt, so you don’t need to add extra salt to it.

And for just a dollar more, you can get wine that not could you cook with, but you can drink too. Any time you cook with wine, you always want to cook with wine you would drink.  If you wouldn’t drink it, don’t cook with it.

Acquistapace recommends getting something with a  screw cap so you can put it back in the refrigerator when finished.

Italian wine is a good choice because it has good acidity. When you’re cooking you really want to have some good acidity in the wine. You want to get some of that wine flavor.

Something over-ripe can add a bit more sugar to the dish. But something dry and easier to drink, makes the dish easier to eat.
