Coconut Creamed Shrimp with Vegetable Medley
Ingredients:
- 1 Lb. Rouses Wild Caught Shrimp 40 ct.
- 4 tablespoons First cold pressed olive oil
- 1 tablespoon curry powder
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- ½ teaspoon turmeric
- 1 teaspoon kosher salt
- ½ teaspoon granulated garlic
- ½ teaspoon cracked black pepper
- 1 tablespoon fresh minced ginger
- 1 fresh pepper such as jalapeno or serrano minced
- 2 tablespoons fresh minced garlic
- 1 Bag Green Giant Vegetable Medley 12 oz.
- 4 tablespoons fresh cilantro cut finely
- 1 cup uncooked JAZZMEN LOUISIANA RICE cooked according to instructions on bag!
- 1 can low fat coconut milk
Instructions:
In a medium mixing bowl, mix curry powder, cumin, turmeric, paprika, salt, granulated garlic, and black pepper.
In a wok or saute pan, heat oil and add shrimp, ginger, hot pepper and garlic. Stirring constantly, cook for 3-4 minutes, add vegetable medley stirring constantly for about 5 more minutes or until desired doneness is achieved. Add coconut milk. Cook for 5 minutes until coconut milk reduces to thicken. Sprinkle cilantro over mixture. Serve over JAZZMEN rice!
