Coconut Creamed Shrimp with Vegetable Medley

Ingredients:

  • 1 Lb. Rouses Wild Caught Shrimp 40 ct.
  • 4 tablespoons  First cold pressed olive oil
  • 1 tablespoon curry powder
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon turmeric
  • 1 teaspoon kosher salt
  • ½ teaspoon granulated garlic
  • ½ teaspoon cracked black pepper
  • 1 tablespoon fresh minced ginger
  • 1 fresh pepper such as jalapeno or serrano minced
  • 2 tablespoons fresh minced garlic
  • 1 Bag Green Giant Vegetable Medley 12 oz.
  • 4 tablespoons fresh cilantro cut finely
  • 1 cup uncooked JAZZMEN LOUISIANA RICE cooked according to instructions on bag!
  •  1 can low fat coconut milk

Instructions:

In a medium mixing bowl, mix curry powder, cumin, turmeric, paprika, salt, granulated garlic, and black pepper.

In a wok or saute pan, heat oil and add shrimp, ginger, hot pepper and garlic.  Stirring constantly, cook for 3-4 minutes, add vegetable medley stirring constantly for about 5 more minutes or until desired doneness is achieved.  Add coconut milk.  Cook for 5 minutes until coconut milk reduces to thicken.  Sprinkle cilantro over mixture.  Serve over JAZZMEN rice!
